Pea, Cabbage, Parmesan and Mint Salad
Description
Pea, Cabbage, Parmesan and Mint Salad layers tender blanched peas with finely shredded cabbage and fresh herbs including mint and parsley to achieve vibrant freshness and aromatic complexity. Thinly sliced radishes add crunch and a mild peppery bite, which complements the creamy, nutty Parmesan cheese sprinkled throughout.
The dressing of lemon juice and extra virgin olive oil imparts a gentle acidity and richness that binds the ingredients without overwhelming them. A light salt and black pepper seasoning rounds out the flavors, making the salad balanced and easy to enjoy as a side dish or light starter.
The salad is lightly tossed and allowed to rest briefly to slightly wilt the cabbage, enhancing tenderness and melding flavors. It can be made ahead with the dressing and cheese held separately to maintain texture. Substitutions such as finely sliced red or Spanish onion can replace radishes if preferred.
Ingredients
- 1 cup peas blanched, frozen
- 3 cups green cabbage finely sliced, or white cabbage
- 1/2 cup mint loosely packed, leaves
- 1/2 cup parsley loosely packed, leaves
- 4 radish finely sliced
- 1/3 cup parmesan
- 2 tbsp lemon juice
- 3 tbsp extra virgin olive oil
- 1/4 tsp salt
- black pepper
Instructions
- Reserve 1 tbsp of the parmesan cheese as garnish.
- Place all ingredients in a bowl and toss gently to combine.
- Allow to sit for 5 minutes to allow the cabbage to wilt slightly.
- Adjust seasoning with extra salt and pepper (if required), garnish with reserved 1 tbsp parmesan cheese and serve.
Notes
- Frozen peas work well here and save preparation time while keeping taste suitable for this salad.
- If radishes are unavailable or undesired, substitute with very finely sliced red or Spanish onion for freshness and color.
- For make-ahead preparation, keep dressing and Parmesan separate and add up to 24 hours before serving.
- Dressed salad can be prepared up to 4 hours in advance; store refrigerated and keep radishes beneath cabbage to prevent browning.
