  • 1 cup peas blanched, frozen
  • 3 cups green cabbage finely sliced, or white cabbage
  • 1/2 cup mint loosely packed, leaves
  • 1/2 cup parsley loosely packed, leaves
  • 4 radish finely sliced
  • 1/3 cup parmesan
  • 2 tbsp lemon juice
  • 3 tbsp extra virgin olive oil
  • 1/4 tsp salt
  • black pepper

Instructions

  1. Reserve 1 tbsp of the parmesan cheese as garnish.
  2. Place all ingredients in a bowl and toss gently to combine.
  3. Allow to sit for 5 minutes to allow the cabbage to wilt slightly.
  4. Adjust seasoning with extra salt and pepper (if required), garnish with reserved 1 tbsp parmesan cheese and serve.

Notes

  • Frozen peas work well here and save preparation time while keeping taste suitable for this salad.
  • If radishes are unavailable or undesired, substitute with very finely sliced red or Spanish onion for freshness and color.
  • For make-ahead preparation, keep dressing and Parmesan separate and add up to 24 hours before serving.
  • Dressed salad can be prepared up to 4 hours in advance; store refrigerated and keep radishes beneath cabbage to prevent browning.
