Ingredients

  • 1 tbsp olive oil
  • 1 tbsp vegetable oil
  • 1 tbsp balsamic vinegar aged
  • 1 tsp Dijon mustard
  • ½ tsp honey
  • salt to taste, sea salt and freshly cracked
  • black pepper to taste, sea salt and freshly cracked
  • mixed greens I used a baby kale, arugula, and radicchio mix
  • 1-2 peaches sliced
  • burrata cheese ripped into bits, to taste
  • balsamic glaze to taste

Instructions

  1. Whisk the olive oil, vegetable oil, balsamic vinegar, dijon mustard, honey, sea salt, and freshly cracked pepper, to taste, in a large salad bowl.
  2. Add the mixed greens to the bowl then toss to coat evenly.
  3. Top with peach slices and bits of the burrata cheese.
  4. Drizzle the top with a touch of balsamic glaze, to taste.
  5. Season with a touch of sea salt and freshly cracked pepper, to taste, if desired. Serve immediately. Enjoy.
