Peach Bellini Cocktail
Description
To prepare, fresh and ripe peaches are peeled, pitted, and pureed until smooth. This puree forms the fruit component of the cocktail. When ready to serve, the peach puree is either spooned into each glass and topped with prosecco or mixed in a large jug before pouring. Care is taken when mixing to control the frothing of the sparkling wine, which can easily overflow or leave residue on the glass.
The flavor balances the natural sweetness of the peach with the dry, bubbly prosecco for a refreshing drink that highlights seasonal fruit. If fresh peaches are unavailable, canned peaches can also be used for the puree. No additional sugar is needed when ripe peaches are used, preserving the natural fruit flavor. The drink can also be made alcohol-free by substituting sparkling water or grape juice for prosecco.
Serving from a pitcher is recommended for multiple servings to maintain presentation and avoid overflow. This cocktail is ideal for festive occasions and warm weather enjoyment.

- 2 peaches fresh and ripe
- 1 bottle prosecco
Instructions
- First, make sure you have fresh and ripe peaches (underripe peaches won't work). Cut them in half, remove the stones and peel them to remove the skin.
- Roughly chop the peaches into medium-sized pieces then blitz them into a puree using a food processor or immersion blender (hand held). Make sure the puree is completely smooth and no chunks remain.
- Pour the peach puree into a large jug or pitcher (2 tbsp per serving) and top with prosecco. Be careful when pouring as the prosecco will froth up a lot and can easily overflow.You can also spoon 2 tbsp of peach puree into each serving glass and top up with prosecco.* see tips below if using this method

- Any sparkling wine can substitute prosecco if unavailable.
- Preparing the cocktail in a large jug helps prevent overflow and keeps glasses neat when serving multiple people.
- Canned peaches can be used to make the puree when fresh peaches are not available.
- The cocktail does not require added sugar if ripe peaches are used because of their natural sweetness.
- To make a non-alcoholic version, replace prosecco with sparkling white grape juice, tonic water, or sparkling water.
