Peach Bellini Cocktail
Description
The Peach Bellini Cocktail begins with a puree made from peeled and quartered peaches, water, and optional sugar for added sweetness. This mixture is blended until smooth, then strained to remove pulp and chilled, ensuring a refined, silky texture. For an extra smooth puree, a second straining after chilling is recommended to reduce foam and prevent overflow when pouring the cocktail.
To assemble, the chilled peach puree is poured into flutes or tall glasses, optionally accented with a dash of raspberry liqueur for complexity, then gently topped with chilled prosecco or sparkling wine. The typical ratio ranges from equal parts to 1.5 parts prosecco to puree, offering a balance of fruitiness and effervescence.
This cocktail makes a celebratory brunch drink or an elegant choice for parties. The light sparkle and fresh peach flavor are particularly enjoyable in warm weather or paired with light appetizers.
For variations, blending the ingredients with ice can yield a frozen version, and substituting sparkling lemonade or white grape juice creates a non-alcoholic option that retains the drink's refreshing character.
Ingredients
- 4 peach seeds removed and quartered, peeled or not - based on your preference, ripe
- 1/3 cup water
- sugar if needed, to taste, or sweetener
- 1 750 ml prosecco chilled, or sparkling wine; bottle
- raspberry liqueur optional
Instructions
- Blend the peaches, sugar if desired, and water until you have smooth puree.
- Strain the peach puree; you should have more or less 3 cups of strained peach puree. Chill the peach puree for a couple of hours or until ready to use. For an even extra smooth puree that will result in less likehood of the drinks overflowing, strain it again a second time after chilling for 2 hours. Chill again.
- To prepare the Bellini, pour the peach puree into champagne flutes or tall glasses, add a dash of raspberry liqueur, and gently top off with the prosecco or sparkling wine. The ratio is about 1:1 or 1:1.5 between peach puree and prosecco. For each drink I usually use about 2 liquid ounces (60 ml, 4 tbs or ¼ cup) of the peach puree about 2-3 liquid ounces of prosecco.
Notes
- For a frozen variation, blend peach puree, champagne, and ice; serve with raspberry liqueur drizzled on top.
- To prepare a non-alcoholic version, replace prosecco with chilled sparkling lemonade or sparkling white grape juice.
