- To make the bars, preheat the oven to 350 degrees. Spray a 9x13 baking dish with non-stick cooking spray or line with parchment paper.
- In a large bowl, beat together sugar, peanut butter, and butter with an electric mixer until well combined. Mix in the eggs and vanilla.
- Stir in the flour, baking powder, baking soda, and salt.
- Spread into the prepared baking dish and bake for 25-30 minutes or until a tester comes out with just a few moist crumbs.
- Let cool completely before frosting and cutting.
To make the fudge frosting:
- To make the frosting, add the butter and hot fudge to a bowl and beat until well combined with an electric mixer.
- Add the powdered sugar, cocoa powder, cream, vanilla, and salt to the bowl and mix on slow until well combined.
- Spread the frosting over the cookie bars and cut into small squares.
- Store leftovers in an airtight container at room temperature for up to 5 days.
Notes
- We use a smooth, processed style peanut butter such as Jif or Skippy for this recipe. Natural peanut butter may not work as well.
