1/2 cup 1 stick unsalted butter, room temperature
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup creamy peanut butter
1 large egg
1 tsp vanilla
1 1/2 cups flour
1/2 tsp baking soda
1/2 tsp salt
FILLING:
1 x 250 ml jar of jam blueberry and strawberry worked exceptionally well in my recipe testing, but feel free to use a flavour of your choice
Chocolate Ganache:
6 oz. dark chocolate roughly chopped
3 oz. bittersweet chocolate roughly chopped
1/4 cup whipping cream
