Peanut Butter Oatmeal Recipe
Description
The recipe starts with cooking rolled oats in water until soft, then stirring in natural peanut butter for creamy, nutty flavor. Meanwhile, fresh or thawed berries are mashed with chia seeds and optional sweetener to create a jam-like topping. Swirling this jam on top of the oatmeal adds a fresh, slightly sweet contrast.
The oats provide a comforting base with peanut butter lending richness and protein. The berry jam introduces bright acidity and texture. Optional toppings such as milk, extra peanut butter, or chia seeds allow for customized richness and mouthfeel.
This oatmeal works well for breakfast or a nourishing snack, balancing plant-based protein and fiber with fresh fruit. Using quick oats and store-bought jam can speed preparation, while thinning peanut butter with a little water makes a pourable drizzle for presentation.
Ingredients
- 1 cup water
- ½ cup rolled oats gluten-free if needed
- 2 tablespoons peanut butter natural
- 2 tablespoons berries frozen and thawed if out of season, ripe
- ½ teaspoon chia seeds
- maple syrup optional, or honey
- chia seed optional toppings, see notes (peanut butter
- peanut butter
- berries
- milk
Instructions
- Place the water and rolled oats in a small pot over high heat and bring it to a boil. Reduce the heat to low and simmer, covered, for 15 minutes, or until the oats are soft, stirring the oats a few times. Stir in the peanut butter.
- While the oats are cooking, make the jam. In a small bowl, mash the ripe berries with the chia seeds and, if using, the honey.
- Pour the oatmeal into a bowl and swirl the jam on top. Serve with any or all of the toppings.
Notes
- Use quick oats and store-bought jam for a faster version.
- To create a peanut butter drizzle, thin natural peanut butter slightly with water until pourable; this doesn't affect taste but improves appearance.
