Peanut Noodles

These peanut noodles are a quick and easy meal that is sure to please everyone at the table! The spicy, creamy peanut sauce comes together in minutes while the noodles cook, making it a hassle-free dish that you can whip up any night of the week!

Ingredients

  • 8 oz brown rice noodles
  • ½ cup peanut butter creamy, unsalted
  • 3 tbsp coconut aminos
  • 2 tbsp rice vinegar
  • 2 tbsp sesame oil toasted
  • 1 tbsp honey or maple syrup for a vegan option
  • 1 tbsp lime juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • ¼ tsp red pepper flakes optional, for added heat
  • ¼ cup water more as needed, warm
  • green onion chopped
  • sesame seeds for garnish

Instructions

  1. First, cook the brown rice noodles according to the package instructions until al dente. Drain and rinse them under cold water to stop the cooking process. Set them aside.
  2. In a medium-sized bowl, whisk together the peanut butter, coconut aminos, rice vinegar, toasted sesame oil, honey, lime juice, minced garlic, grated ginger, and red pepper flakes (if using).
  3. Gradually add warm water to the sauce, whisking continuously, until you achieve a smooth and creamy consistency. You may need to add more water if the sauce is too thick. Set the sauce aside.
  4. In a large mixing bowl, combine the cooked rice noodles with the peanut sauce. Toss and stir gently until the noodles are well coated with the sauce.
  5. If desired, garnish with chopped green onions, sesame seeds, chopped peanuts, and cilantro.
  6. Serve the peanut noodles immediately at room temperature, or refrigerate for a few hours to serve chilled. The flavors will develop more if you let the noodles sit for a while.

  • Use all-natural creamy peanut butter made from just peanuts.  We recommend using unsalted peanut butter.
  • Feel free to add in tofu or chicken for added protein.
  • Store leftovers in the fridge for up to 4 days.
