Peanut Tikoy Rolls are a Filipino dessert made from steamed glutinous rice flour batter filled with peanut butter, rolled, cut, and coated in crushed roasted peanuts. The result is a chewy, sweet treat with a rich peanut flavor and a crunchy peanut coating. The use of coconut or vegetable oil for greasing ensures easy release and a glossy finish, while steaming produces a soft, sticky texture that contrasts with the crunchy nut coating.

Description

This recipe begins by dissolving sugar in warm water then mixing with glutinous rice flour and vanilla extract to form a smooth batter. The batter is steamed in oil-greased pans until set and firm, creating a gelatinous, chewy base. After cooling slightly, the tikoy is turned onto an oiled surface to prevent sticking.

Peanut butter is piped along one edge of the tikoy and the batter rolled around it to encase the filling. The roll is sliced lengthwise and then cut into bite-sized pieces. Each piece is dredged in finely chopped roasted peanuts, adding texture and nutty taste.

The final snack combines sticky sweet rice cake with creamy peanut butter filling and crunchy peanuts on the exterior. It is often served at celebrations or as a snack. Greasing ensures smooth rolling and prevents sticking during preparation.

  • 2 cups glutinous rice flour
  • ¾ cup sugar
  • 1 cup water warm
  • 1 teaspoon vanilla extract
  • ¼ cup peanut butter for filling
  • 1 cup peanut for dredging, roasted, finely chopped
  • coconut oil for greasing, or vegetable oil

Instructions

  1. In a bowl, mix glutinous rice and sugar. Pour in warm water and vanilla extract and mix until batter becomes smooth.
  2. Grease 2 (6x6-inch) square or (7x5-inch) rectangle pan (glass, ceramic, or aluminum)  with oil and fill it with the batter about ½ inch  high.
  3. Steam over medium heat for 10-12 minutes or until inserted toothpick comes out clean. Remove from steamer and let cool a bit. Run an oiled knife around the sides of the pan to let it loose if needed.
  4. Grease a baking mat with little oil and tip the Tikoy over to transfer to the surface.
  5. Fill a piping bag or a plastic bag with peanut butter and cut a small opening. Pipe a line of peanut butter along one side of the Tikoy close to the edge.
  6. Roll the edge of Tikoy over enclosing the peanut butter inside. Cut along the length of the Tikoy where the edge closed to create a single roll. Do the same to the rest until all Tikoy is used.
  7. Cut each roll into half. Dredge each piece with crushed roasted peanut.
  8. Serve on a plate or pack them in a container box.
