Peppermint Bark Chocolate Brownies. Decadent homemade chocolate brownies with white chocolate peppermint bark. The perfect Christmas holiday brownie.

Ingredients
- 1/2 cup butter (softened)
- 1 cup sugar (this recipe works with 3/4 cup of sugar as well)
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla
- 1/2 cup flour
- 1/4 cup cake flour
- 1/2 cup cocoa powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips
- 1 1/2 cups peppermint bark (divided)
- 1/4 teaspoon peppermint extract (optional)
Instructions
- Preheat oven to 350 degrees. In a large mixing bowl, cream together butter, sugar, and brown sugar for 3-4 minutes or until light and fluffy. Add eggs one at a time, mixing well after each addition. Add vanilla. If using peppermint extract, add it now.
- Stir in flour, cake flour, cocoa, and salt until mixed together.
- Fold in chocolate chips and 3/4 cup of peppermint bark, reserving the rest for sprinkling on the top.
- Pour into an 8 x 8 pan and spread evenly. Sprinkle remaining 3/4 cup of peppermint bark over the top of brownies. Bake for 26-36 minutes.
