Honey Mustard Sauce

  • 1/2 cup prepared mustard
  • 1/4 cup honey
  • 1/4 cup light corn syrup
  • 1/4 cup mayonnaise

Chicken

  • 1 pound boneless skinless chicken breasts (4 portions)
  • 1/2 teaspoon Morton Season-All seasoned salt
  • vegetable oil
  • 1 cup sliced mushrooms canned or jarred, drained
  • 6 pieces Bacon fried until crisp and cut in half crosswise
  • 3 cups shredded Colby jack cheese
  • 2 teaspoons chopped parsley

Instructions

  1. Blend all the ingredients for the honey mustard sauce until smooth. The corn syrup may be adjusted to your taste. Set aside until needed.
  2. Rub the chicken breasts with seasoned salt and set aside to marinate for 1 hour.
  3. Cook the chicken in a pan over medium heat with just enough oil to prevent sticking. Cook on both sides until the chicken is slightly golden and reaches an internal temperature of 165°F. Remove the chicken from the pan.
  4. Slather the chicken breasts with honey mustard sauce. Top with mushrooms and 3 pieces of bacon. Sprinkle with shredded Colby Jack cheese until the chicken is completely covered.
  5. Microwave or bake in a 350°F oven just until the cheese melts.
  6. Sprinkle with parsley and serve with honey mustard sauce.
