Ingredients
Honey Mustard Sauce
- 1/2 cup prepared mustard
- 1/4 cup honey
- 1/4 cup light corn syrup
- 1/4 cup mayonnaise
Chicken
- 1 pound boneless skinless chicken breasts (4 portions)
- 1/2 teaspoon Morton Season-All seasoned salt
- vegetable oil
- 1 cup sliced mushrooms canned or jarred, drained
- 6 pieces Bacon fried until crisp and cut in half crosswise
- 3 cups shredded Colby jack cheese
- 2 teaspoons chopped parsley

Instructions
- Blend all the ingredients for the honey mustard sauce until smooth. The corn syrup may be adjusted to your taste. Set aside until needed.
- Rub the chicken breasts with seasoned salt and set aside to marinate for 1 hour.
- Cook the chicken in a pan over medium heat with just enough oil to prevent sticking. Cook on both sides until the chicken is slightly golden and reaches an internal temperature of 165°F. Remove the chicken from the pan.
- Slather the chicken breasts with honey mustard sauce. Top with mushrooms and 3 pieces of bacon. Sprinkle with shredded Colby Jack cheese until the chicken is completely covered.
- Microwave or bake in a 350°F oven just until the cheese melts.
- Sprinkle with parsley and serve with honey mustard sauce.
