Description

This jam recipe uses quince fruit cooked gently at low heat in just enough water to cover the fruit, then combined with sugar and simmered under a lid for about four hours. The lid trapping steam and heat encourages the quince to soften thoroughly and darken in color, achieving a characteristic deep red hue associated with Persian quince preserves.

The resulting jam is thick and flavorful, often enjoyed as a spread or accompaniment to bread, yogurt, or cheese. Adding walnuts after cooling introduces a crunchy contrast and a traditional twist.

The lengthy simmer requires occasional water adjustments to keep the fruit submerged and avoid burning. The final product is cooled with the lid on to retain moisture and enhance flavor melding.

  • 2 quince skin on, sliced or cut into very small cubes
  • 3 cups white sugar
  • 2 - 2 1/2 cup water
  • walnuts optional

Instructions

  1. Cook quince and water (water should cover quince) in a large pan until it starts simmering.
  2. Add sugar and bring it to simmer. Put the lid on.
  3. Turn the heat down and let it simmer on low heat with the lid on for 4 hours until the color is dark red. Check every 30 minutes to make sure it has enough water, if water is not enough, add 1/2 cup more water.
  4. When the jam reaches desired color and consistency, turn the heat off and let it cool with the lid on.
  5. If desired, add walnuts after the jam is cool.

Notes

  • Simmering the jam with the lid on helps achieve a deep red color and rich flavor.
  • Check every 30 minutes during simmering to add water if needed, keeping the quince covered.
  • Optionally stir in walnuts after the jam has cooled for added texture.
