Description
This Pesto Salad Dressing uses fresh basil leaves blended with grated Parmesan, garlic cloves, salt, and black pepper to form a creamy herb base. The smooth, emulsified dressing can be made quickly in a high-speed blender, creating uniform texture and vibrant green color. It is ready to serve immediately but can also be refrigerated up to five days. Chilling causes the dressing to thicken, so bringing it back to room temperature and stirring before use restores pourability.
This dressing pairs well with mixed greens, fresh vegetables, or as a sauce for grilled meats or sandwiches. Its bright, herbal character enhances simple salads without overpowering other ingredients.
Ingredients
- ½ cup extra-virgin olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- ¾ cup basil tightly packed; stems removed, fresh leaves
- ¼ cup Parmesan Cheese grated
- 3 garlic cloves
- 1 teaspoon salt fine sea salt
- ¼ teaspoon black pepper
Instructions
- In a high-speed blender, combine the olive oil, vinegar, lemon juice, basil, Parmesan, garlic, salt, and black pepper. Secure the lid and blend until very smooth, about 60 seconds.
- Stop and scrape down the blender, as needed, and once the dressing looks evenly blended, give it a taste and make any adjustments you like. Serve the dressing right away, or store it in an airtight mason jar in the fridge for up to 5 days. It will thicken when chilled, so be sure to let it come to room temperature again before serving the leftovers.
