Cheesecake Layer

  • 8 ounces cream cheese softened
  • 1 teaspoon vanilla extract

Pineapple Topping

  • 20 ounces crushed pineapple drained
  • 8 ounces Cool Whip thawed

Instructions

Graham Cracker Crust

  1. Start by mixing the crushed graham crackers, sugar, and melted butter in a medium-sized bowl. Stir until the mixture holds together when pressed.
  2. Press the mixture evenly into the bottom of a 9x13-inch baking dish to form the crust. Use the back of a spoon or the bottom of a glass to smooth it out.
  3. Place the dish in the refrigerator to chill while you prepare the cream layer.

Cream Cheese Layer

  1. Beat the softened cream cheese in a large mixing bowl until smooth and creamy.
  2. Add the powdered sugar and vanilla extract to the cream cheese and mix until fully combined.
  3. Spread the cream cheese mixture evenly over the chilled graham cracker crust.

Assemble

  1. Spread the drained crushed pineapple evenly over the cream layer.
  2. Gently spread the Cool Whip over the pineapple layer, making sure to cover the entire dish evenly.
  3. Chill and serve:
  4. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the layers to set.
