Pineapple Mac Nut Waffles
Description
This recipe combines dry ingredients including all-purpose flour, cornstarch, baking powder, baking soda, sugar, and salt. The wet ingredients—pineapple slices, dry roasted macadamia nuts, milk, melted coconut oil, egg, and vanilla—are blended until smooth before gently folding into the dry mixture. Allowing the batter to rest briefly helps achieve a consistent texture.
Cooking the batter on a heated waffle iron until golden creates waffles with crispy edges and soft insides infused with tropical pineapple sweetness and crunch from macadamia nuts and coconut flakes. Serving these waffles with chopped macadamia nuts and coconut syrup complements and amplifies their rich, nutty, and fruity profile.
Ingredients
- 3/4 cup all-purpose flour
- 1/4 cup cornstarch
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 tablespoon sugar
- 1/2 teaspoon salt

- 1/3 cup macadamia nuts dry roasted, Mauna Loa brand
- 1 cup milk

- 1 egg large
- 3 Tablespoons coconut flaked
- 1 teaspoon vanilla extract
Instructions
- Turn waffle iron to high heat.
- In a medium sized bowl, combine flour, cornstarch, baking powder, baking soda, sugar, and salt. Mix well.
- Using a blender or food processor, blend together the pineapple, macadamia nuts, milk, melted coconut oil, egg, and vanilla until smooth.
- Stir wet ingredients into the bowl of dry ingredients, mixing until just combined. Don't over mix. Allow the batter to set for 10 minutes before cooking.
