  • 3/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 cup pineapple slices canned, DOLE brand
  • 1/3 cup macadamia nuts dry roasted, Mauna Loa brand
  • 1 cup milk
  • 1/3 cup coconut oil melted
  • 1 egg large
  • 3 Tablespoons coconut flaked
  • 1 teaspoon vanilla extract

Instructions

  1. Turn waffle iron to high heat.
  2. In a medium sized bowl, combine flour, cornstarch, baking powder, baking soda, sugar, and salt. Mix well.
  3. Using a blender or food processor, blend together the pineapple, macadamia nuts, milk, melted coconut oil, egg, and vanilla until smooth.
  4. Stir wet ingredients into the bowl of dry ingredients, mixing until just combined. Don't over mix. Allow the batter to set for 10 minutes before cooking.
  5. Pour a small amount of batter onto the waffle iron (about 1/2 a cup) and cook until golden and crispy. Repeat with remaining batter. Serve with chopped macadamia nuts and coconut syrup (yum!) Enjoy!
