Sweet, tangy, and tropical – this simple homemade pineapple syrup is perfect for adding a burst of flavor to pancakes, drinks and desserts.

Ingredients
- 1 cup white sugar 200g
- 1 cup water 240ml
- 1 cup pineapple chunks fresh, canned or frozen - no need to thaw - 165g
Instructions
- Add all ingredients to a pot and bring to the boil. Reduce the heat and simmer for 10 minutes.
- Remove from the heat and allow to cool slightly.
- Place a fine mesh sieve over a bowl and pour in the mixture to remove the pineapple pieces.
- Pour into a bottle or jar and store in the refrigerator once completely cooled.
- Note: the pineapple simple syrup will thicken further once cool.
