Pizza Chicken

Ingredients

  • 3 chicken breasts, boneless and skinless (about 2 pounds)
  • 1 ½ cups shredded Mozzarella cheese
  • ½ cup Homemade pizza sauce
  • 22 lices pepperoni
  • 1 ½ tablespoons olive oil
  • 2 teaspoons dried oregano divided
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Slice each chicken breast in half, making 6 pieces in total. Using a meat tenderizer, slightly flatten them out, making sure they are level and even.
  2. Sprinkle both sides with the salt, pepper, dried basil and half the dried oregano.
  3. Heat a large oven-safe skillet to medium. Add in the olive oil and the chicken. Sauté for a few minutes on both sides until almost cooked through. Do not overcook, as the chicken will finish cooking in the oven.
  4. Preheat oven to 450°F.
  5. Turn off the heat and spread the pizza sauce over the tops of each piece of chicken in the skillet. Add the shredded mozzarella cheese over the sauce.
  6. Add the pepperoni, then place the skillet in the oven and bake for 7-10 minutes or until the cheese has melted. Allow to cool slightly before serving.

Notes

  • You can also add the toppings of your choice or even replace the pepperoni with something else like Italian sausage, mushrooms, sliced tomatoes, etc.
