  • 4 lices sourdough bread
  • 4 tablespoon tomato puree
  • 2 garlic crushed, clove
  • 1 tablespoon oregano dried
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 1 teaspoon olive oil
  • 1 yellow bell pepper sliced
  • 1 red bell pepper sliced
  • 2 cheese slices
  • 1 tomato sliced, beef
  • 2 handful arugula aka rocket

Instructions

  1. In a bowl, mix together 4 tablespoon Tomato puree, 2 Garlic clove, 1 pinch Sea salt and ground black pepper and 1 tablespoon Dried oregano.
  2. Add 1 teaspoon Olive oil to a pan and add 1 Yellow bell pepper and 1 Red bell pepper. Gently cook for 3-4 minutes until softened.
  3. Spread the tomato sauce on 2 of the 4 slices Sourdough bread. Top the bread with the cooked peppers and 2 Cheese slices.
  4. Put them under the grill for 3-4 minutes until melted.
  5. Top with 1 Beef tomato and 2 handful Rocket (arugula).
  6. Finish with other slices of bread and serve.

Notes

  • Arugula can be replaced with spinach for a milder leafy green and added iron.
  • Cheese slices such as Swiss, mature cheddar, or mozzarella can be used based on preference.
  • Other vegetables like mushrooms or courgettes can substitute bell peppers.
  • Adding cooked shredded chicken before the cheese can incorporate meat into this sandwich.
