Pizza Sandwich
Description
Pizza Sandwich features sourdough bread slices spread with a garlic and oregano infused tomato puree. Cooked yellow and red bell peppers add sweetness and softness beneath melted slices of cheese, creating a melty, savory layer. Fresh beef tomato slices and a handful of rocket (arugula) add moisture and a peppery finish on top before closing the sandwich. The use of sourdough gives a sturdy base with a slight tang.
The peppers are gently cooked in olive oil to soften but still retain some bite, complementing the creamy melted cheese. The assembling and brief grilling melt the cheese and warm the topping, sealing the flavors together. The fresh tomato slices and arugula added after grilling keep a fresh, vibrant contrast to the warm ingredients.
This can be served as a savory lunch or a satisfying snack. Adjustments can be made: if arugula’s sharpness isn’t preferred, spinach can be substituted for a milder green. The recipe allows for flexibility in cheese choice or adding cooked chicken for extra protein.
The sandwich is best served warm immediately after grilling to enjoy the combination of melted cheese, soft peppers, and fresh toppings. Variations in vegetables can be used depending on preference and pantry availability.
