Description
Pizza Soup begins with browning Italian sausage and onion to develop a savory base. Ingredients
- 1 pound Italian sausage
- 1/2 onion chopped
- 6 oz tomato paste
- 2 crushed tomato 14.5 oz each, canned
- 32 ounces chicken broth
- 1 teaspoon garlic minced
- 1 teaspoon Italian seasoning
- 1 teaspoon sugar
- 4 oz pepperoni quartered
- 1 red bell pepper chopped
- 2 cups mozzarella cheese shredded
Instructions
- Brown the Italian sausage with the diced onion in a large stock pot or dutch oven over medium high heat. Break up the sausage as it browns. Once browned, drain off any of the excess grease.
- Stir in the remaining ingredients except for the shredded cheese.
- Bring the mixture to a boil, reduce the heat to low and simmer for 10-12 minutes until the bell pepper is tender and the soup has thickened.
- Stir in the shredded mozzarella cheese. Cook for 2-3 minutes until the cheese has melted.
- Serve warm with bread or topped with croutons and enjoy!
Notes
- Store leftovers in an airtight container in the refrigerator for up to five days.
- Ground beef can replace Italian sausage if desired, altering the flavor slightly.
