Description

Pizza Soup begins with browning Italian sausage and onion to develop a savory base. Chopped red bell pepper adds texture and sweetness. Pepperoni slices contribute additional pizza-style spice and richness to the mix.   • 1 pound Italian sausage
  • 1/2 onion chopped
  • 6 oz tomato paste
  • 2 crushed tomato 14.5 oz each, canned
  • 32 ounces chicken broth
  • 1 teaspoon garlic minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon sugar
  • 4 oz pepperoni quartered
  • 1 red bell pepper chopped
  • 2 cups mozzarella cheese shredded

Instructions

  1. Brown the Italian sausage with the diced onion in a large stock pot or dutch oven over medium high heat.  Break up the sausage as it browns.  Once browned, drain off any of the excess grease.
  2. Stir in the remaining ingredients except for the shredded cheese.
  3. Bring the mixture to a boil, reduce the heat to low and simmer for 10-12 minutes until the bell pepper is tender and the soup has thickened.
  4. Stir in the shredded mozzarella cheese.  Cook for 2-3 minutes until the cheese has melted.
  5. Serve warm with bread or topped with croutons and enjoy!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to five days.
  • Ground beef can replace Italian sausage if desired, altering the flavor slightly.
