Plain Sweet Lassi | Sweet Lassi | Indian Lassi Recipe
Description
Plain Sweet Lassi is a traditional Indian yogurt-based drink made by blending yogurt with milk or water, sugar, and ice cubes. The process involves beating the yogurt until smooth, crushing the ice, then blending all ingredients until a frothy layer forms on top. Adding malai on the surface enhances creaminess and texture.
The flavor is mildly sweet with the tang of yogurt balanced by sugar, and the texture is light, chilled, and frothy due to the aeration from blending. This drink is served cold and poured from a height to induce foaminess, which is characteristic of a well-made lassi.
Serving Plain Sweet Lassi is ideal during warm weather or as a cooling accompaniment to spicy Indian meals. The malai topping adds a decorative and creamy contrast. This recipe focuses on classic preparation without additional fruit flavors or spices.
To achieve the preferred frothy texture, blending for a full two minutes is recommended, along with pouring from a height to develop foam. Using fresh, chilled ingredients enhances the drinking experience.
Ingredients
- 1 cup yogurt chilled
- ½ cup milk or water, chilled
- 4-6 ice cubes
- 4 tablespoon sugar
- malai optional, as required
Instructions
- Beat the yogurt in a bowl until smooth.
- Crush the ice cubes in a blender.
- In the same blending jar, add yogurt, milk, and sugar together. Then blend for 2 minutes or until the mixture becomes frothy.
- If you are using the wooden homemade blender, churn all the ingredients together except malai until you see a frothy layer on top.
- Plain sweet lassi is ready to serve. Pour lassi into the serving glass from a height to create foams.
- Then add a dollop of malai on top and serve.
Notes
- Blend ingredients for at least 2 minutes to achieve a light, frothy texture.
- Pour the lassi from a height into glasses to create foam on top.
- Adding malai is optional but contributes a creamy richness.
