Plátanos Maduros Fritos [Recipe + Video] Fried Sweet Plantains

This recipe explains how to prepare fried ripe sweet plantains, called plátanos maduros fritos. The plantains have a ripe yellow skin that is just starting to blacken, indicating sweetness. They are peeled and sliced into diagonal pieces, then deep-fried in hot oil until both sides develop a golden brown exterior. The fried plantains have a soft, tender interior with a caramelized sweet surface. They are drained on paper towels to remove excess oil and served hot or at room temperature as a side or snack.

Description

Plátanos Maduros Fritos involves frying ripe yellow plantains that have a natural sweetness when their skins begin to darken. The plantains are peeled carefully and sliced diagonally into thin pieces about half a centimeter thick to ensure an even fry. The slices are cooked in hot oil at around 225 ºC until golden brown on both sides, which brings out a rich caramelized flavor and tender texture inside. Draining on paper towels helps reduce excess oil for a balanced finish.

The taste is a sweet contrast to savory dishes and can work well as a side or snack, enjoyed warm or at room temperature. Frying in small batches ensures they crisp evenly without sticking. These fried plantains provide a straightforward way to transform ripe plantains into a flavorful treat.

This method focuses on controlling oil temperature and timing for the perfect golden exterior and soft interior. Using a paring knife helps peel the plantains neatly. Serving is simple and adaptable to many meal types.
