Poor Mans Lobster

Poor Man's Lobster uses halibut boiled in a sweet and salty water mixture, served with melted butter and lemon. The fish cooks until flaky and tender and the butter dipping mimics the rich experience of eating lobster for a simpler, accessible seafood dish.

Description

This recipe simulates the lobster experience by poaching halibut in a mix of water, sugar, and salt, which seasons the fish gently while cooking it to a firm, flaky texture. The halibut pieces are boiled for about 10 minutes to ensure tenderness without overcooking. Meanwhile, butter is melted carefully to be served warm but not boiling.

The cooked halibut is removed and served with a squeeze of fresh lemon and generous melted butter for dipping. Submerging the fish pieces in butter adds richness reminiscent of lobster dining, balancing the mild white fish with buttery flavor.

This straightforward preparation highlights the halibut’s mild flavor enhanced by the poaching liquid and dipping butter. It’s suitable as a main course for seafood lovers seeking a simpler or more affordable alternative to lobster.

Ingredients

Servings
  • 1/2 cup sugar
  • 1/4 cup salt
  • 1 pound halibut
  • 1/2 cup butter (sweet cream works great)
  • 1 lemon

Instructions

  1. In a medium to large pot bring 2 quarts of water, sugar, and salt to a boil on medium-high heat.
  2. Cut halibut into 2-3 large pieces (so it cooks faster) and add to boiling water.
  3. Boil for about 10 minutes or until halibut is nice and flaky.
  4. In the meantime, melt butter in a pot, but do not boil.
  5. Remove halibut from water, squeeze a little fresh lemon on it and serve with melted butter (I like to completely submerge my halibut in the melted butter, much like you would do with lobster).

Notes

  • Use sweet cream butter for a richer dipping experience.
  • Serve with lemon slices to brighten the flavor and complement the butter.
  • Dip halibut pieces fully in melted butter to mimic eating lobster.
  • Monitor boiling time carefully to prevent the fish from drying out.
