This Poppy Seed Chicken Casserole is a quick and easy weeknight dinner the family will love. It's a creamy Southern classic that's loaded with protein-rich chicken, sprinkled with delightful poppy seeds, and covered in a blanket of crispy, buttery Ritz crackers. Makes a great freezer meal as well!

Ingredients
- 3-4 cooked chicken breasts roasted or grilled or boiled and shredded
- 2 cans 10.5 ounces each cream of chicken soup
- 8 ounces cream cheese at room temperature
- ½ cup grated Parmesan cheese
- 1 tablespoon poppy seeds
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon freshly ground pepper
- 1 teaspoon Morton kosher salt
- 1 cup crushed buttery crackers such as Ritz
- 2 tablespoons unsalted butter

Instructions
- Preheat oven to 350° F.
- In a large bowl, shred the chicken breasts.
- Add cream of chicken soup, parmesan cheese, cream cheese, salt,pepper, onion, garlic powder, and poppy seeds - then fold together untilthoroughly combined.
- Melt the butter in a small bowl and use a bit of it to lightly grease the bottom of a 9" x 13" baking dish. Add crushed crackers to the remaining melted butter and toss to coat evenly.
- Transfer chicken mixture to baking dish and spread it into an even layer.
- Sprinkle buttered crackers over the top of the chicken mixture.
- Bake for 30-35 minutes, or until edges are bubbly and crackers are golden brown.
- Serve hot and enjoy!
