- Grate the peeled potatoes using a fine grater. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.
- In a mixing bowl, combine the grated potatoes, finely grated onion, eggs, flour, salt, and black pepper. Mix well until all the ingredients are evenly combined.
- Allow the mixture to rest for 15 minutes. This helps the potatoes release more moisture, resulting in crispier pancakes.
- Heat a generous amount of vegetable oil in a large frying pan over medium-high heat.
- Take a spoonful of the potato mixture and carefully place it in the hot oil. Flatten it slightly with the back of the spoon to form a pancake shape. You can make multiple pancakes at once, but be sure not to overcrowd the pan.
- Fry the pancakes for about 4-5 minutes on each side, or until they are golden brown and crispy. You may need to adjust the heat to prevent burning.
- Remove the cooked potato pancakes from the pan and place them on a plate lined with paper towels to remove excess oil.
- Continue this process until all the potato mixture is used, adding more oil to the pan as needed.
