  • 1 tablespoon olive oil
  • 4 lices whole grain bread
  • ¼ lb prosciutto thinly sliced
  • 2 ounces mozzarella cheese shredded
  • 1 ounce blue cheese
  • 2 tablespoons honey

Instructions

  1. In a small bowl, mix this mayonnaise and black olive tapenade.
  2. Heat a panini grill and brush the oil over one side of each of the slices of bread.
  3. Turn the bread slices over and spread on the olive mayonnaise. Divide the prosciutto, mozzarella, and blue cheese between 2 slices of bread. Drizzle the honey over top and then close the sandwiches with the remaining bread oiled side facing up.
  4. Grill the paninis for 2-3 minutes on each side, until grill marks appear and the cheese has melted. Cut the sandwiches in half and serve right away.
