  • 2 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1 cup unsalted butter cold
  • 8-10 tablespoons cold water

Instructions

  1. Combine flour and salt in a large bowl.
  2. Grate the cold butter into the flour mixture, tossing to coat evenly.
  3. Gradually add cold water, starting with 6 tablespoons, mixing until the dough holds together when squeezed.
  4. Form the dough into a square, wrap in plastic, and chill for 1 hour.
  5. Roll out the dough on a floured surface into a rectangle, fold it in thirds like a letter. Briefly chill in the refrigerator. Repeat this process 5 more times, rotating 90 degrees each time.
  6. Wrap the dough and chill for at least 2 hours or freeze for later use.
