Ingredients

Servings
  • 1 cup jasmine rice
  • cooking oil for frying

Instructions

  1. Preheat the oven to 250°F.
  2. Cook rice according to package directions. Transfer to a parchment paper-lined baking sheet.
  3. Bake for 2 to 2.5 hours or until all the moisture has evaporated. Let cool completely.
  4. Pour 2 inches of oil into a large saucepan; heat over medium-high until the thermometer reaches 425°F. Add a few grains of cooked rice. The rice will start puffing immediately if the oil is hot enough.
  5. Working in batches, carefully add a 1/2 cup of rice to hot oil; fry until puffed (3-6 seconds.)
  6. Using a small metal wire sieve, carefully transfer the rice to a paper towel-lined baking sheet. Let cool completely.
