Kalua Pulled Pork:

  • 3-4 pounds pork roast click for recipe
  • 1-2 tablespoons salt or kosher salt, sea salt
  • 1/3 cup liquid smoke
  • 1 cup water

Fresh Mango Avocado Salsa:

  • 1 Mango diced, ripened
  • 2 avocado diced
  • 1 lime juiced
  • ¼ cup cilantro finely chopped

Remaining Taco Ingredients:

  • 8 corn tortillas
  • 2 Tablespoons vegetable oil
  • ¼ cup sour cream

Instructions

For the Kalua Pulled Pork:

  1. Rub pork generously with salt, pour on liquid smoke.
  2. Place pork in the Crock Pot and add water.
  3. Cover and cook on low for 8-10 hours or until it will easily shred into juices (do not drain). Shred and keep warm until ready to serve with tacos.

Fresh Mango Avocado Salsa:

  1. Dice the mango and avocados into small cubes.
  2. Put the diced mango and avocado in a bowl, then squeeze on the fresh lime juice and sprinkle with the chopped cilantro. Stir everything together, and refrigerate until tacos are ready.

Assembling the Tacos:

  1. Fry some corn tortillas in oil until a little crispy, then set on a paper towel and lightly salt.
  2. Layer each tortilla with Kalua Pork and fresh mango salsa.
  3. Top the tacos with sour cream.
