Pumpkin Banana Bread

Ingredients

  • 2 bananas mashed
  • 2 eggs beaten
  • cup coconut oil melted and cooled
  • 1 ⅓ cups pumpkin puree
  • ½ cup honey
  • ½ cup granulated sugar
  • 2 ½ cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • 1 teaspoon allspice

Instructions

  1. Preheat oven to 350 degrees F. Grease a loaf pan and place a piece of parchment paper into the pan so that it hangs over the sides. Grease parchment paper too and set aside.
  2. In a large mixing bowl, beat together the bananas, eggs, oil, pumpkin, honey, and sugar.
  3. In a medium mixing bowl, stir together the flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and allspice.
  4. Pour the flour mixture into the pumpkin mixture and stir until just combined.
  5. Pour banana bread batter into prepared loaf pan.
  6. Bake for 60 min or until a toothpick inserted into the center comes out clean.
  7. Allow to rest for 10 minutes before removing from the pan and cutting into slices.
