Pumpkin Muffins

These Pumpkin Muffins are incredibly moist and bursting with warm fall spices, making them the perfect treat for any time of day. Topped with cinnamon sugar, they're quick and easy to make!

For the Muffins:

  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice *** see notes below
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

For the Cinnamon Sugar Topping:

  • 4 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, salt, and pumpkin pie spice until well combined.
  3. Whisk the eggs, pumpkin puree, vegetable oil, milk, and vanilla extract in a separate bowl until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; if there are a few lumps, it's okay.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. In a small bowl, mix the granulated sugar and ground cinnamon.
  7. Sprinkle the cinnamon sugar mixture evenly over the tops of the muffin batter.
  8. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs.
  9. Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Pumpkin pie spice: If you don't have pumpkin pie spice, you can make your own blend using the following spices:• 4 teaspoons ground cinnamon• 2 teaspoons ground ginger• 1 teaspoon ground nutmeg• 1 teaspoon ground clovesMix together and store in an airtight container. Use 2 teaspoons of this blend in your pumpkin muffin recipe
