Ingredients

  • 3 cups Quaker oats rolled old fashioned
  • 2 cups all-purpose flour
  • 1 cup butter 2 ½ sticks, softened
  • 1 cup brown sugar packed
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt only if using unsalted butter
  • 2 teaspoon ground cinnamon
  • 1 cup raisins or chopped walnuts, optional

Instructions

  1. Preheat the oven to 375°F. Line a baking sheet with parchment and set aside.
  2. In a large bowl or stand mixer, add the butter, brown sugar and granulated sugar. Beat until creamy and fluffy.
  3. Add the egg and vanilla extract. Beat until incorporated and smooth with a hand mixer.
  4. Add the flour, baking soda, salt and cinnamon. Mix until incorporated.
  5. Add the oats and optional raisins/walnuts, mixing until incorporated.
  6. Add tablespoonfuls or use a 1 ½-inch cookie scoop to drop batter onto the prepared baking sheet, spaced 2 inches apart to allow for expansion.
  7. Chill the uncooked cookie balls for 30 minutes in the refridgerator.
  8. Bake for 7-10 minutes or until the edges start to turn golden brown and the centers still look under-baked.
  9. Remove the baking sheet from the oven. Using a rigid spatula, transfer the cookies to a wire cooling rack.
  10. Cool slightly before serving. To store for later, cool completely and place in airtight containers.

Notes

  • Storage: These cookies are best when fresh, but you can store them in airtight containers at room temperature for up to 2 days or in the freezer for up to 3 months.
