  • 1/4 cup olive oil
  • 1/2 yellow onion , diced
  • 3 cloves garlic , minced
  • 28 ounces crushed tomatoes
  • 6 ounces tomato paste
  • 2 teaspoons oregano dried
  • 2 teaspoons basil dried
  • 1 teaspoon kosher salt
  • 1 teaspoon sugar
  • 1/4 teaspoon crushed red pepper
  • 1/2 cup chicken broth , (water is okay too)

Instructions

  1. Add the olive oil and onion to the pan and sauté on medium low until very lightly browned.
  2. Add the garlic and let cook for 15 seconds or so until you can smell the garlic.
  3. Add in the rest of the ingredients and simmer, covered, on low for 30 minutes.

Notes

  • Use chicken broth for deeper flavor, but water can be substituted if necessary without drastically changing the result.
  • Simmer the sauce covered on low heat to develop flavor while preventing excessive evaporation.
  • Adjust seasoning after simmering to balance salt and sweetness to taste.
