Quick Mexican Garlic Butter Shrimp
Description
This recipe starts by melting butter with olive oil and frying aromatics including garlic puree, finely chopped spring onions, mild chili, ground cumin, and chopped fresh coriander until fragrant. After cooling, this mixture is combined with raw shrimp to marinate briefly.
Shrimp are then grilled on a hot griddle over fire for 2-3 minutes per side until cooked through, obtaining slight grill marks and a tender texture. Serving the shrimp with lemon wedges adds bright acidity that complements the richness and spice of the marinade. Crusty bread buttered on the side provides a balance and helps soak up the flavorful juices.
The recipe suggests pairing options like rice, pasta, warm flatbreads, or sweet potato for varied accompaniments. It also notes the dish’s Weight Watchers Freestyle points and encourages adding lemon juice directly to the marinade for enhanced flavor.
