Ingredients

Servings
  • 8 ounces cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup powdered sugar
  • 1 cup fresh or frozen raspberries (plus extra for garnish, optional)
  • 1 teaspoon vanilla extract
  • 1 cup graham cracker crumbs (or vanilla wafer crumbs)
  • Optional coating: Melted white chocolate, sprinkles, chopped nuts, shredded coconut

Instructions

  1. Combine ingredients: In a large bowl, beat together the softened cream cheese and butter until smooth and creamy.
  2. Add sugar and vanilla: Gradually add the powdered sugar, mixing until well combined. Stir in the vanilla extract.
  3. Mash raspberries: Gently mash the raspberries with a fork or potato masher. You can leave some whole for visual appeal if you like.
  4. Add raspberries to mixture: Gently fold the mashed raspberries into the cream cheese mixture.
  5. Form balls: Roll the mixture into 1-inch balls.
  6. Chill: Place the raspberry cheesecake balls on a baking sheet lined with parchment paper or wax paper. Refrigerate for at least 2 hours, or preferably overnight, to allow them to firm up.
  7. Coat (optional): If desired, melt white chocolate and drizzle or dip the chilled balls. You can also roll them in sprinkles, chopped nuts, or shredded coconut.
  8. Garnish (optional): Before serving, you can garnish with additional fresh raspberries.
  9. Serve: Serve chilled.

Notes

  • Raspberries: Fresh or frozen raspberries can be used. If using frozen raspberries, thaw them completely and drain off any excess liquid before using.
  • Crumbs: Graham cracker crumbs or vanilla wafer crumbs both work well.
  • Coating: The coating is optional, but it adds a nice touch and makes the balls more festive.
  • Storage: Store the raspberry cheesecake balls in an airtight container in the refrigerator. They will keep for several days.
