- 8 ounces cream cheese, softened
- ½ cup (1 stick) unsalted butter, softened
- ½ cup powdered sugar
- 1 cup fresh or frozen raspberries (plus extra for garnish, optional)
- 1 teaspoon vanilla extract
- 1 cup graham cracker crumbs (or vanilla wafer crumbs)
- Optional coating: Melted white chocolate, sprinkles, chopped nuts, shredded coconut
Instructions
- Combine ingredients: In a large bowl, beat together the softened cream cheese and butter until smooth and creamy.
- Add sugar and vanilla: Gradually add the powdered sugar, mixing until well combined. Stir in the vanilla extract.
- Mash raspberries: Gently mash the raspberries with a fork or potato masher. You can leave some whole for visual appeal if you like.
- Add raspberries to mixture: Gently fold the mashed raspberries into the cream cheese mixture.
- Form balls: Roll the mixture into 1-inch balls.
- Chill: Place the raspberry cheesecake balls on a baking sheet lined with parchment paper or wax paper. Refrigerate for at least 2 hours, or preferably overnight, to allow them to firm up.
- Coat (optional): If desired, melt white chocolate and drizzle or dip the chilled balls. You can also roll them in sprinkles, chopped nuts, or shredded coconut.
- Garnish (optional): Before serving, you can garnish with additional fresh raspberries.
- Serve: Serve chilled.
Notes
- Raspberries: Fresh or frozen raspberries can be used. If using frozen raspberries, thaw them completely and drain off any excess liquid before using.
