Ingredients
For the Red Velvet Cookies
- 1 (15.25 ounce) Red Velvet cake mix
- ½ cup vegetable oil
- 2 large eggs
For the Cream Cheese Frosting
- 2 ounces softened cream cheese (¼ block)
- 3 tablespoons heavy cream or milk more as needed
- 2 cups powdered sugar
- ¼ teaspoon vanilla extract
- ⅕ teaspoon salt
Instructions
To make the red velvet cookies
- Preheat oven to 375˚F.
- In a large bowl, combine the cake mix, oil, and eggs. Mix until smooth with an electric mixer or by hand.
- Place rounded tablespoonfuls of the cookie dough on a baking sheet 2 inches apart.
- Bake for 9-10 minutes or until the cookies are set and no longer shiny. Cool on the cookie sheet for 2-3 minutes, then transfer to a wire cooling rack.
To make the cream cheese frosting
- Use an electric mixer to beat the softened cream cheese and heavy cream together until smooth. Add the vanilla and salt and mix.
- Add the powdered sugar a little bit at a time and mix until smooth. Add more cream if needed to get the frosting to the desired consistency for spreading.
- Once the cookies are completely cool, top each one with a dollop of frosting and use a spatula to spread it over the top of the cookie.
Notes
- Makes about 18 cookies.
