Description
This rice salad features whole roasted chicken shredded and mixed into cooked Uncle Ben's rice cooked to a slightly firm texture. The salad incorporates giardiniera vegetables chopped finely and marinated briefly in olive oil to soften flavors. The dressing is a combination of olive oil and red wine vinegar added gradually to avoid overpowering acidity. Mixing all components results in a layered flavor profile with the savory chicken, acidic and tangy preserved vegetables, and the neutral rice base.
The salad is recommended to be chilled prior to serving, enhancing melded flavors and refreshing texture typical of summer dishes. It can be adapted as a main course or a hearty side. The use of whole roasted chicken imparts depth compared to plain cooked chicken pieces.
Ingredients
- 1 chicken whole, roasted
- 2 cups rice Uncle Ben's rice
- 7 tablespoons olive oil
- 4 tablespoons red wine vinegar
- 16 ounces giardiniera
Instructions
- In a large pot with salted water cook the rice until still has a light bite when tasted.
- Place in a small bowl the Giardiniera vegetables cut in small pieces.
- Add 1 tablespoon olive oil and mix. Let it set for 10 minutes.
- When the rice has cool down add the pieces of chicken, the Giardiniera and the olive oil. Blend well and add vinegar ½ teaspoons at a time and taste in between. It should not be overpowered by vinegar.
- Chill before serving if time permitting.
