Ingredients
- 4 boneless skinless chicken breasts
- ¼ cup mayonnaise
- 1 tablespoon lemon juice
- 30 crushed Ritz crackers about 1 cup
- ¼ cup Parmesan Cheese grated
- 2 teaspoons dried basil

Instructions
- Preheat the oven to 400 degrees Fahrenheit. Prepare a baking sheet by lining it with foil and spraying it with non-stick cooking spray.
- In a small bowl mix together ¼ cup mayonnaise and 1 tablespoon lemon juice.
- In a separate bowl, add 30 crushed Ritz crackers, ¼ cup parmesan cheese, and 2 teaspoons dried basil. Mix to combine.
- Dredge 4 boneless skinless chicken breasts in the mayonnaise mixture and then coat them in the Ritz cracker mixture.
- Place the chicken on the prepared baking sheet and bake for 20 minutes or until the chicken is cooked throughout and no longer pink.
