Filled with roast beef, melty cheese, an easy slaw, and a horseradish mayo, this Roast Beef Panini is a 5 star homemade sandwich! Ready in no time at all, it’s perfect for lunch or for an easy dinner.

Ingredients
Slaw
- 3 cups coleslaw mix
- 4 tablespoons light mayonnaise
- 2 teaspoons mustard
- 1/2 teaspoon celery salt
Horseradish Mayo
- 1/2 cup light mayonnaise
- 2 tablespoons minced oil-packed sun-dried tomatoes
- 1 tablespoon prepared horseradish
- 1/4 teaspoon garlic powder
- Pinch of red pepper flakes
Sandwiches
- 8 lices bread
- Thinly sliced red onion
- 8 oz thinly sliced deli roast beef
- 8 lices thin-sliced Colby-jack cheese
- 4 tablespoons butter softened
Instructions
- In a bowl, combine the slaw ingredients and mix to combine. Set aside.
- In another bowl, mix together the horseradish mayo ingredients. Set aside.
- Preheat a panini press or a skillet.
- Assemble the sandwiches by laying the slices of bread on a surface. Spread some of the mayo on each slice, then top each with a slice of cheese.
- Divide the roast beef into four portions and place a portion on the top of 4 of the slices of bread. Top with the red onions and the slaw.
- Place the remaining 4 slices on top to form 4 sandwiches.
- Spread the outside of each sandwich with the butter.
- If using a panini press, grill one or two sandwiches at a time until the cheese is melted and the sandwich is golden brown. If using a skillet, add the sandwiches and cook until the bread is golden, then flip and cook the second side.
- Cut in half to serve.
