For the Za'atar Seasoning

  • 6 tbsp ground sumac
  • 6 tbsp dried thyme
  • 6 tbsp sesame seeds toasted
  • 3 tbsp kosher salt
  • 1 tbsp ground cumin

For the Roasted Carrots and Kale Salad

  • 16-20 thin carrots
  • 2 tbsp canola oil
  • 1 ½ teaspoons za'atar seasoning
  • kosher salt to taste
  • 1 bunch kale
  • ½ cup toasted cashews
  • Juice of 1 lemon
  • cup extra virgin olive oil
  • 4 garlic cloves
  • ½ teaspoon chili flakes
  • 1 cup Greek yogurt
  • 1 teaspoon cumin

Instructions

For the Za'atar Seasoning

  1. Combine the sumac, thyme, sesame seeds, kosher salt, and cumin, in an air-tight jar and gently shake to combine. Keep sealed in a cool, dry place when not in use.

For the Roasted Carrots and Kale Salad
