Description
This sauce combines whole cherry tomatoes with sliced onion, smashed garlic cloves, fresh thyme sprigs, olive oil, and seasoning. The ingredients are mixed and roasted covered at a high temperature for an hour to soften and tenderize the vegetables, then uncovered for an additional 15 to 30 minutes to deepen the roasted flavor and concentrate the sauce.
The roasting process creates a sauce rich in sweetness and savory notes from caramelized onion and garlic. The fresh thyme adds an herbal aroma that complements the tomato base. It can be served as is, with a rustic texture, or blended smooth (removing thyme stems) for a creamier consistency suitable as a pasta sauce or spread.

Ingredients
- 6 cups cherry tomato see notes
- 1 medium onion sliced
- 4 cloves garlic smashed with the side of your knife
- 6 prigs thyme sub 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
- 1 teaspoon salt sea salt
- 1 teaspoon black pepper sea salt
Instructions
- Preheat your oven to 425 degrees.
- Place the cherry tomatoes, onion, garlic, thyme, olive oil, salt, and pepper into a large baking dish and mix everything around. Cover the dish with foil and roast in your oven for 1 hour.
- Uncover the baking dish and continue to roast for another 15-30 minutes (see notes.)
- Either serve as is or, for a creamy sauce, blend the sauce (removing the thyme sprigs first) in your blender.
Notes
- Wrinkly or frozen cherry tomatoes can be used; frozen tomatoes require approximately 1 ½ hours of roasting.
- Adding basil or balsamic glaze when serving adds a complementary flavor, especially over pasta.
- Remove thyme sprigs before blending for a smooth sauce texture.
