Roasted Potatoes & Onions with Blue Cheese

This roasted potato recipe is made irresistibly delicious by adding roasted onions, smoked paprika and creamy blue cheese.

Ingredients

  • 1 1 ½ lb. package Little Potato Co. Creamer potatoes (I used Baby Boomers)
  • 3 tablespoons olive oil
  • ¾ teaspoon smoked paprika
  • ¼ + ⅛ teaspoon salt
  • ¼ teaspoon ground pepper
  • 1 red onion peeled & cut into ½-inch wedges through the root
  • 3 tablespoons ¾ ounce crumbled blue cheese
  • 3 tablespoons minced flat-leaf parsley

Instructions

  1. Preheat oven to 400 degrees F. Lightly coat two baking sheets with cooking spray.
  2. In a large bowl, combine the potatoes, 2 tablespoons of olive oil, smoked paprika, salt and pepper. Toss to coat the potatoes.
  3. Add the onion wedges and the remaining 1 tablespoon of olive oil. Gently toss to coat.
  4. Transfer the potatoes and onions to the two baking sheets.
  5. Cook until the vegetables are turning brown and the potatoes are tender when pierced with a fork, rotating the baking sheets and flipping the onions halfway through, about 30 minutes total.
  6. Cut each onion wedge into 3 pieces.
  7. Transfer the vegetables to a bowl, and toss with the blue cheese and parsley. Serve.
