Roasted Red Peppers And Almond Salad

Ingredients

  • 2 chicken breasts
  • 1/4 cup sliced almonds
  • 1 head of romaine lettuce
  • 1 roasted red pepper sliced into thin strips
  • 1/2 cup low-fat or fat-free feta cheese
  • 1/4 of a small red onion diced

Dressing:

  • 1/2 a small avocado
  • 1 teaspoon olive oil
  • 1 tablespoon white wine vinegar
  • 2 teaspoons balsamic vinegar
  • 1 1/2 teaspoons garlic minced

Instructions

  1. Preheat your grill to high and your oven to 375 degrees Fahrenheit.
  2. Place the chicken on your grill and the sliced almonds in the oven. Grill the chicken for 5-6 minutes per side, flipping once. Roast the almonds for about 5 minutes, keeping a close watch so they don't burn.
  3. In the meantime, add the avocado, olive oil, white wine, balsamic vinegar, and garlic to a small food processor. Process until creamy and well combined.
  4. Divide the lettuce, roasted red pepper, feta cheese, and red onion evenly between two plates. Top with the grilled chicken and sprinkle with the toasted almonds.
  5. Top with the avocado dressing and enjoy!
