Roasted Sesame Dressing (Kewpie inspired)

Caramelized onions

  • 1 medium yellow onion sliced thinly
  • tsp kosher salt
  • water as needed

Dressing

  • 1 tbsp dark brown sugar
  • 1 tbsp water
  • 2 tbsp Kewpie mayonnaise
  • 1 ½ tbsp soy sauce
  • 1 tbsp crushed roasted sesame seeds
  • 1 tbsp rice vinegar
  • ¼ tsp red miso
  • tsp garlic powder
  • tsp roasted sesame oil

Instructions

Caramelized onions

  1. In a pan over medium heat, add the sliced 1 medium yellow onion and slowly cook until caramelized. Stir occasionally to prevent sticking, and add one tablespoon of water when you find onions sticking to help deglaze.
  2. When the onions are golden brown, add the ⅛ tsp kosher salt and stir.
  3. Mix until the onions are dark brown but not burnt. You should end up with about ¼ cup of caramelized onions. This can take up to 45 minutes-1 hour.

Dressing

  1. In a small bowl, combine the 1 tbsp dark brown sugar and 1 tbsp water. Stir together. Place in the microwave for 10 seconds or until the sugar is completely dissolved.
  2. To make the crushed sesame seeds, add the roasted sesame seeds into a food processor and blend until they turn into fine powder, but not paste.
  3. In a food processor, add the caramelized onions from above, sugar water from above, 2 tbsp Kewpie Mayonnaise, 1 ½ tbsp soy sauce, 1 tbsp crushed roasted sesame seeds, 1 tbsp rice vinegar, ¼ tsp red miso, and ⅛ tsp garlic powder. Process until the onions are completely blended.
  4. Stir in the ⅛ tsp roasted sesame oil and taste test. Adjust ingredients if you prefer.
  5. Serve with your favorite bed of greens.
