Roasted Za'atar Chicken
Description
This Roasted Za'atar Chicken recipe uses chicken legs halved and coated thoroughly with a mixture of za'atar spice blend, olive oil, salt, and black pepper. Roasting at 425°F cooks the chicken through in about 35 to 40 minutes, producing tender meat with crispy skin. Red onion wedges roasted alongside the chicken add subtle sweetness and texture variation.
The za'atar seasoning imparts earthy, herbal, and slightly tangy flavors from the blend’s typical ingredients, complementing the richness of the chicken. A short broil finishes the chicken allowing the skin to brown further for a crisp top layer. Garnishing with chopped parsley adds freshness and color.
Serve this chicken alongside sides such as roasted potatoes, rice pilaf, or a green salad for a complete meal. The robust flavors and straightforward preparation make it suitable for a family dinner or casual gathering.
Leftover chicken can be stored airtight in the refrigerator for up to 3-4 days or frozen for 3 months. Reheat in a 350°F oven until warmed through or use an air fryer for crispier skin. Using a thermometer to check for doneness near the bone ensures the chicken is safely cooked.
Ingredients
- 4 chicken legs cut in half (about 2 ½ pounds)
- 3 tablespoons za'atar spice blend
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ red onion sliced into wedges
- parsley for serving, chopped, fresh
Instructions
- Preheat the oven to 425˚F. Pat the chicken dry and place in a 9x12 baking dish.
- In a small bowl, stir together the za'atar, olive oil, salt and pepper. Rub the za'atar seasoning well into the chicken all over. Scatter the red onions all over.
- Roast until the chicken is cooked to an internal temperature of 165°F, 35 to 40 minutes. Broil for an additional 2-4 minutes until the chicken is browned.
- Garnish with fresh chopped parsley and serve with potatoes, rice pilaf or salad.
Notes
- Store leftovers in an airtight container and refrigerate for up to 3-4 days or freeze for 3 months.
- Reheat in a 350°F oven or air fryer to regain crisp skin and warm through.
- To achieve extra crispy skin, broil the chicken for a few minutes after roasting.
- Use a meat thermometer near the bone to verify the chicken reaches 165°F internal temperature for safe consumption.
