Description
Roma Tomato Sauce begins by sautéing minced garlic in olive oil to release its aroma, then adding finely diced fresh Roma tomatoes along with Italian seasoning and julienned basil leaves. The mixture simmers gently to concentrate flavors and soften the tomatoes. Simmering can range from 10 to 20 minutes or longer for deeper taste.
Simultaneously, pasta is cooked according to package directions until al dente, then combined with the sauce to coat the noodles well. The end result is a pasta dish showcasing bright, fresh tomato flavor complemented by fragrant herbs and garlic.
This sauce is ideal to serve warm, with optional salt, pepper, and fresh Parmesan cheese added to taste. Using fresh tomatoes rather than canned produces a subtle sweetness and clean texture.
Storing the sauce in airtight containers in the refrigerator keeps it fresh up to 5 days, or it can be frozen for up to 6 months. Alternate tomato types such as San Marzano or other paste tomatoes can be used for variation.
Ingredients
- 2 tablespoons garlic minced
- 1 tablespoon olive oil
- 3 large fresh Roma tomatoes
- 1 tablespoon Italian seasoning
- 6-8 basil leaves
- 1 pappardelle pasta or any pasta, package
Instructions
- In a sauce pot, prepare pasta according to box instructions.
- Next, heat a skillet to medium-heat and add in minced garlic, olive oil, and finely diced tomatoes. Then, stir in Italian seasoning and julienned basil leaves. Let simmer for 10-20 minutes. You can simmer up to one hour for deeper flavor.
- Once the noodles and pasta sauce are done cooking, add the noodles to the sauce.
- Twirl noodles and sauce together, top with salt and pepper and fresh parmesan if desired. Serve warm and enjoy!
Notes
- Store sauce in an airtight glass container in the refrigerator for up to 5 days or freeze for up to 6 months.
- While this recipe uses garden-fresh Roma tomatoes, San Marzano, Viva Italia, or other paste tomatoes can be substituted.
