Romige amuse van asperge en amandel

Licht, romig voorgerecht voor een lente- of paasbrunch of -diner. Gewoon om de smaakpapillen te strelen. Met asperges, amandelboter en ahornsiroop. En wat geroosterde amandelschaafsel eroverheen gestrooid.

  • 16 16 asperges
  • 2 2 el amandelpasta
  • 2 2 el ahornsiroop
  • 1 1 handje geschaafde amandelen

Instructions

  1. Schil en snijd de asperges in ongeveer 3 stukken. Zorg dat je 4 kopjes intact hebt om ze in hun geheel als garnering te gebruiken. Voeg toe aan een kookpot (met de asperges) en kook gedurende 4 minuten.
  2. Rooster ondertussen de amandelen in bakpan.
  3. Haal de asperges eruit en laat ze drogen. Voeg toe aan de beker van je staafmixer, behalve 4 mooie kopjes.
  4. Voeg ahornsiroop en amandelpasta toe. Mix met de staafmixer.
  5. Serveer in 4 kleine (wijn)glazen. Steek in elk glas een asperge kopje. Garneer met de geroosterde amandelen.

Notes

  • Serveer met een klein lepeltje.
