Russian Chicken

Russian Chicken is made with a tangy, sweet sauce and baked until the chicken is tender. It's super quick and made with Russian or Catalina dressing, onion soup mix, and apricot preserves for a sweet and sour flavor that is fantastic over white or brown rice with a nice salad or green vegetable for an easy, satisfying weeknight meal!

Ingredients

  • 4-6 boneless skinless chicken breasts cut into 1-inch pieces
  • 1 cup Russian or Catalina dressing
  • 1 cup apricot preserves
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 package dry onion soup mix

Instructions

  1. Preheat oven to 400°F.
  2. Pat chicken pieces dry with a paper towel, then add to a casserole dish.
  3. Combine the dressing, preserves, garlic powder, dry onion soup, salt, and pepper in a blender or food processor. Blend or pulse until smooth, then pour over the chicken, tossing to coat evenly.
  4. Cover the casserole dish with foil and bake for 40-50 minutes, removing the foil during the last 10 minutes of baking until the chicken is cooked through and the sauce is hot and bubbly.
  5. Serve over rice, pasta, or potatoes.
