Instructions

  1. Preheat the oven to 180 degrees Celsius (350 Fahrenheit, fan oven 160 degrees Celsius).
  2. Remove the skin off the salmon fillets, cut them into chunks and add them to a blender.
  3. Blitz to get a paste.
  4. Add the egg, panko breadcrumbs, chopped spring onion and dill, salt and pepper.
  5. Blitz again.
  6. With wet hands, shape balls out of the mixture.
  7. Arrange the salmon balls onto a baking tray and spray with the cooking oil spray.
  8. Bake for 15 minutes.

Notes

  • The egg acts as a binding agent, and it also keeps the salmon balls moist and juicy in the oven. Without the egg, the balls will be on the tougher side, so I highly recommend adding it to the recipe.
  • The salmon meatballs can also be cooked in an air fryer at the same temperature, just keep an eye on them after 10-12 minutes, as they might cook faster, and shake the air fryer drawer half the way through the cooking time.
  • If you don't have cooking oil spray, just drizzle some regular or olive oil over the salmon bites, it helps give them a good colour while baking.
  • If you do not have a blender, use a shark knife to chop the salmon fillets really finely, even if there are some small bits, the egg will bind everything together well.
