These Strawberry Bliss Balls are the most marvelous summer treat!!🍓 They are light but substantial, perfectly sweet, and *almost* too pretty to eat! Great for a pre-workout snack or snacking on-the-go, they're super easy to make and have over 4 grams of protein per ball!

Ingredients
- 1 (1-oz.) bag freeze dried strawberries (28g)
- 1/4 cup sugar free pancake syrup
- 1/4 cup drippy nut butter (56g)
- 1 cup old fashioned oats (80g)
- 1/4 cup oat flour (32g)
- 1/4 cup vanilla or strawberry protein powder (31g) I used PEScience
- 1 Tbsp flax seeds (10g)
- 1 Tbsp sweetener of choice (12g) I used Swerve
- 1 tsp strawberry extract
- 2 Tbsp shredded sweetened coconut (15g) for coating
Instructions
- Add all the dried strawberries, syrup, and nut butter to a food processor and pulse until combined. Add the rest of the ingredients (except the shredded coconut) and mix until all ingredients are combined well.
- Using your hands, roll into 14 balls (or however many you wish). You can dampen your palms with a little water or nonstick spray to help prevent sticking.
- Roll balls in shredded coconut.
Notes
- Keep stored in an airtight container in the fridge or at room temperature for up to one week.
