Ingredients

  • 2 tablespoons olive oil
  • 1 onion sliced
  • 1 teaspoon cumin seeds crushed
  • 1 bay leaf
  • 1 yellow bell pepper chopped
  • 1 red bell pepper chopped
  • 2 garlic chopped cloves
  • 10 ounces salmon filet chopped
  • 3 teaspoons brown sugar
  • 8 ounces tomato chopped, fresh
  • ½ teaspoon saffron
  • 2 tablespoons parsley chopped, fresh
  • teaspoon cayenne pepper
  • water as needed
  • ½ Coriander bunch, chopped
  • ½ teaspoon thyme dried
  • salt to taste
  • black pepper to taste

Instructions

  1. All ingredients ready? Let's begin!
  2. Heat a skillet on the stove then toast the cumin for 30 seconds.
  3. Add the oil and onions.
  4. Add the peppers, garlic, sugar and bay leaf.
  5. Cook, stirring often, until the vegetables are golden.
  6. Add the tomatoes, parsley, cayenne, thyme and saffron, and 2/3 of the cilantro.
  7. Turn the heat down a bit and simmer for 15 minutes, adding water when needed so it is sauce-like.
  8. When the sauce is thick and bubbly, add salt and black pepper to taste.
  9. Now add a little more water then add the salmon on top and press it down.
  10. Cover and cook for 10 minutes or until the salmon is done.
  11. Serve garnished with the remaining cilantro.
